I wanted to create a second white wine focused on freshness and intense florality; my Pinot Gris, with its old vines over 50 years old, perfectly met this demand. Thus, I chose to produce a white Pinot Gris in 2025 instead of a macerated version, to test its potential and simply for the enjoyment of it. This will likely be an ephemeral cuvée available for one or two years before returning to a macerated style. This Pinot Gris did not undergo malolactic fermentation in order to preserve all its freshness.

This wine was born in Switzerland. Here, there are no synthetic inputs, neither in the vineyard nor in the cellar. Instead, plant infusions, fermented extracts, and compost tea watch over the vines like benevolent companions, gently accompanying them through every stage of the season, complementing copper and sulfur to limit the spread of downy and powdery mildew. Thus, this wine breathes the earth that raised it, free and sincere, in harmony with nature's rhythms.

Grape Variety

100% Pinot Gris.

Vinification

After direct pressing, careful settling was performed, followed by the incorporation of a starter culture of indigenous yeasts.

To halt malolactic fermentation, a small amount of volcanic sulfur was added. A light filtration was carried out one week before bottling.

Tasting Notes

This Pinot Gris awakens like a mineral caress, with notes of ripe pear and acacia blossom. It possesses a silky roundness and a depth that embraces the freshness of high altitudes. Born in the vineyards at the foot of the Valais Alps, it retains the memory of the breath of limestone terroirs and the warmth of the south-facing sun.

A wine defined by freshness, both floral and precise, best enjoyed chilled during summer aperitifs, with shellfish, or even with fish from alpine lakes.

Aging Potential

Magnificent in its fruitiness from the first year, if offered a refuge where coolness and humidity are in balance, this wine can rest for 3 to 5 years without losing its freshness.

2025 Vintage in Valais

The 2025 vintage in Valais will remain etched in memory as a year of climatic grace, where the vines benefited from a mild spring and a stable summer, free from late frosts, extreme heatwaves, or major sanitary pressures. This ideal weather allowed for a harmonious vegetative cycle, from flowering to veraison, promoting regular sugar accumulation and optimal phenolic maturity without stress to the plant. Consequently, we were able to conduct the harvest with rare serenity, staggering the picking to gather each grape variety at its point of perfection.

The resulting wines are distinguished by their natural balance and great consistency, moving away from the nervous tension of 2024 or the solar power of 2023 to offer an expression of fullness. The whites captivate with their aromatic purity and elegant unctuosity, while the reds reveal silky structures, deep colors, and tannins of remarkable finesse. This "remarkable" vintage confirms that in Valais, when weather conditions are exceptional, we can give birth to wines of great harmony, ready to seduce with their early accessibility while asserting a fine aging potential.
