Umami

This wine began in 2022, with the resumption of an abandoned plot. In addition to Pinot Noir, I discovered Merlot, Gamay, Pinot Blanc and Gris, which prompted me to create a coplanted blend from the first year. In 2023, I rented another plot with Gamaret and Garanoir, perfectly complementing the vintage. The challenge was to harvest all these grape varieties at the same time, but it is this complexity that gives "Umami" its unique charm.

Umami, this mysterious and subtle word, is like a secret whispered by the flavors themselves. It designates this fifth dimension of taste, the one that goes beyond sweet, salty, sour and bitter. It is a deep and rich sensation, a sweetness that awakens the taste buds in another dimension. Umami brings a warm, complex light to our culinary experience, revealing hidden beauty in every sip.
